Chocolate Shell:
- 1 cup semi-sweet or dark chocolate chips
- 2 tbsp coconut oil
Pomegranate Chia Jam Filling:
- 1 cup Pomegranate Bite-Sized Cubes (thawed slightly)
- 1–2 tbsp honey or maple syrup (adjust sweetness to taste)
- 1–2 tbsp chia seeds
- 1 tsp lemon juice (optional, to enhance tartness)

Cook pomegranate cubes in a saucepan over medium heat for 3–5 minutes, stirring occasionally, until softened. Mash gently, leaving some texture.

Stir in honey or maple syrup and lemon juice. Adjust sweetness to taste.

Remove from heat, mix in chia seeds, and let cool for 10–15 minutes to thicken. Refrigerate to help thicken.

Melt chocolate chips and coconut oil in a heatproof bowl using a double boiler or microwave in 20-second intervals, stirring until smooth. Let cool slightly.

Coat molds or lined muffin cups with a thin layer of melted chocolate. Freeze for 5 minutes.

Add a dollop of chia jam, leaving room at the edges. Cover with more chocolate to seal.
